  • 1 lb Brussels sprouts, trimmed and halved

  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • 2 tbsp honey or maple syrup (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine sliced carrots and halved Brussels sprouts.
  3. Drizzle with olive oil, sprinkle with salt and pepper, and add honey or maple syrup if desired. Toss well to coat.
  4. Spread the mixture in a single layer on a lined baking sheet.
  5. Roast for 25-30 minutes until golden brown and tender, tossing halfway through.
  6. Serve warm, optionally drizzling with balsamic reduction for added flavor.
