  • 2 tbsp freshly squeezed lemon juice

Instructions

  1. Preheat oven to 375°F (190°C). Rinse and pat dry the chicken.
  2. In a bowl, whisk together olive oil, garlic powder, paprika, lemon juice, and herbs to create the marinade.
  3. Rub the marinade generously over the chicken.
  4. Place in a roasting pan breast-side up and roast for approximately 1 hour and 20 minutes or until the internal temperature reaches at least 165°F (75°C).
  5. Remove from oven and let rest for 15 minutes before carving.
