  • 2 skinless salmon fillets (6 oz each)
  • 1 cup orzo pasta
  • 1 can (14 oz) artichoke hearts, drained
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp olive oil
  • ¼ cup Parmesan cheese, shredded
  • 1 tbsp Dijon mustard

Instructions

  1. Rinse salmon fillets under cold water and pat dry.
  2. Cook orzo in salted boiling water according to package instructions until al dente.
  3. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add artichoke hearts and cook until golden.
  4. Push artichokes aside in the skillet, add salmon fillets skin-side down, and cook for 4 minutes on each side until cooked through.
  5. Drain orzo and combine with salmon and artichokes in the skillet. Drizzle lemon juice, sprinkle Parmesan cheese, and toss gently.
  6. Serve immediately, garnished with herbs if desired.
