  • 4 Granny Smith or Honeycrisp apples, peeled and sliced
  • 1 tsp cinnamon
  • ¾ cup brown sugar
  • ½ cup heavy cream

  1. Preheat oven to 325°F (163°C). Mix graham cracker crumbs with melted butter; press into a springform pan and bake for 10 minutes.
  2. Sauté sliced apples with cinnamon in a skillet for five minutes until soft yet firm.
  3. Blend cream cheese and sugar until smooth; add eggs one at a time, followed by sour cream. Mix until fluffy.
  4. Spread half the cheesecake mixture over the crust, layer with half the apples, then top with remaining cheesecake batter and apples.
  5. Bake for about one hour until the center is slightly jiggly. Cool in the oven with the door ajar for one hour.
  6. For caramel, heat brown sugar and heavy cream in a saucepan until thickened; stir in salt to taste.
