Scalloped Sweet Potatoes are a comforting and indulgent side dish that beautifully combines creamy layers of sweet potatoes and rich cheddar cheese.   • 2 lbs sweet potatoes, peeled and thinly sliced
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 3 cloves garlic, minced
  • 2 tbsp butter
  • Salt and pepper to taste
  • ½ cup panko breadcrumbs mixed with 1 tbsp melted butter for topping

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a casserole dish.
  2. Layer half of the sliced sweet potatoes in the dish.
  3. In a saucepan over medium heat, melt the butter and sauté the garlic until fragrant. Add heavy cream, salt, and pepper; stir well.
  4. Pour half of the creamy mixture over the first layer of sweet potatoes. Repeat with remaining potatoes and cream.
  5. Sprinkle shredded cheddar cheese on top, followed by the panko breadcrumb mixture.
  6. Bake uncovered for 40-45 minutes until golden brown and bubbly.
