Juicy chicken breasts roast alongside fresh zucchini, sweet cherry tomatoes, and caramelized red onions, all drizzled with a zesty marinade of olive oil, lemon juice, and oregano.   • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 2 medium zucchini, sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • 1 medium red onion, sliced
  • 4 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. In a bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  3. Place chicken in a zip-top bag or bowl; pour half the marinade over it. Marinate for at least 30 minutes.
  4. Chop zucchini and slice red onion; toss them with the remaining marinade.
  5. Arrange marinated chicken on one side of the sheet pan; spread zucchini, tomatoes, and onion on the other side.
  6. Roast for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and vegetables are tender.
