  • 1 meaty ham hock
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 green bell pepper, diced
  • 4 cups low-sodium chicken broth
  • 1/2 tsp cayenne pepper (adjust to taste)

Instructions

  1. If using dried black-eyed peas, soak them overnight. Drain and rinse if using canned.
  2. In a skillet over medium heat, sauté diced onion and green bell pepper until soft.
  3. Transfer sautéed vegetables to the slow cooker. Add black-eyed peas, ham hock, minced garlic, cayenne pepper, and chicken broth. Stir gently.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, remove the ham hock, shred the meat, and return it to the pot. Stir well before serving.
