  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 medium onion, chopped
  • 3 cloves fresh garlic, minced
  • 1 can (14.5 oz) diced tomatoes (fire-roasted recommended)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 2 tablespoons taco seasoning
  • 4 cups low-sodium chicken broth

Instructions

  1. Chop the onion and mince the garlic.
  2. Optionally sauté the onion and garlic in a skillet over medium heat until soft.
  3. In the slow cooker, combine chicken breasts, diced tomatoes with juices, black beans, corn, sautéed onions and garlic (if used), taco seasoning, and chicken broth. Stir well.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, remove chicken breasts and shred with forks; return shredded chicken to the soup.
  6. Serve hot with your choice of toppings like avocado slices or cheese.
