  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 5 dried guajillo chiles, soaked
  • 2 chipotle peppers in adobo sauce
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 avocados, sliced
  • ½ cup fresh cilantro, chopped
  • Salt to taste

Instructions

  1. Soak the guajillo chiles in hot water for 15 minutes. Remove stems and seeds, then blend with chipotle peppers, garlic, and onion until smooth.
  2. In a large bowl, combine ground beef and blended spice mixture. Mix well using hands.
  3. Form the mixture into 4 patties about 1 inch thick; create an indentation in the center for even cooking.
  4. Preheat grill to medium-high (375°F). Cook patties for about 6 minutes per side or until desired doneness.
