  • 2 medium Yukon Gold potatoes, diced (about 2 cups)

  • 1 tsp smoked paprika
  • 1 medium onion, diced

  • 4 cups low-sodium vegetable broth
  • Salt and pepper to taste

Instructions

  1. Shuck the corn and dice the potatoes, onion, and garlic.
