  • 2 tbsp cornstarch

Instructions

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Brown the chicken for about 5 minutes on each side, then remove and set aside.
  2. In the same skillet, sauté the chopped onions and minced garlic until golden (about 3 minutes).
  3. Pour in the chicken broth and soy sauce, scraping up any bits from the pan. Bring to a gentle simmer.
  4. Whisk cornstarch with water, then add it to the sauce to thicken. Return the chicken to the skillet and pour in heavy cream. Simmer for about 10 minutes until the chicken reaches an internal temperature of 165°F.
  5. Prepare rice according to package instructions.
  6. Serve smothered chicken over rice and drizzle with extra sauce.
