  • 10 egg roll wrappers
  • 1 cup cooked shredded chicken or turkey
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 2 jalapeños, diced
  • 1 cup shredded cheddar cheese
  • Ranch dressing for dipping

Instructions

  1. Preheat the oven to 400°F (200°C) or heat oil in a saucepan for frying.
  2. In a bowl, mix together shredded chicken, black beans, corn, diced jalapeños, and cheese until well combined.
  3. Take an egg roll wrapper and place about 2 tablespoons of filling in the center. Fold the sides in and roll tightly from the bottom.
  4. Seal edges with water to secure the filling.
  5. Bake on a greased baking sheet for 15-20 minutes until golden brown or fry each side in oil for 3-4 minutes until crispy.
  6. Serve hot with ranch dressing.
