  • 1 cup jasmine rice
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup water
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (adjust for spice preference)
  • 2 tbsp lime juice
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Rinse jasmine rice until the water runs clear. Combine it with coconut milk and water in a saucepan. Bring to a simmer, cover, and cook on low for 15 minutes until liquid is absorbed.
  2. While the rice cooks, season salmon fillets with paprika, cayenne pepper, salt, and pepper. Drizzle with lime juice.
  3. Heat oil in a skillet over medium-high heat and cook salmon for about 5 minutes per side until golden brown.
  4. In a small bowl, whisk together soy sauce and an extra squeeze of lime juice.
