  • 1 large Italian bread loaf
  • 2 cups fresh baby spinach
  • 1 cup canned artichoke hearts, drained and chopped
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 1 tsp garlic powder
  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut off the top of the bread loaf and hollow out the inside, saving the crumbs for later.
  3. In a skillet over medium heat, drizzle olive oil and sauté spinach until wilted (about 3 minutes). Add artichokes and warm through.
  4. In a mixing bowl, combine sautéed veggies with cream cheese, mozzarella, Parmesan, and garlic powder until well blended.
  5. Generously stuff the mixture into the hollowed-out bread. Drizzle with olive oil and optionally replace the bread lid.
  6. Bake on a parchment-lined baking sheet for 25-30 minutes until golden brown and bubbly.
