Steak Fajita Quesadillas are a delicious fusion of tender marinated steak, sautéed bell peppers, and onions, all enveloped in crispy tortillas and melted cheese.   • 1 lb flank steak
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 4 (8-inch) flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil (for cooking)

Instructions

  1. Slice the flank steak against the grain into thin strips. Chop the peppers and onion into bite-sized pieces.
  2. In a bowl, toss the steak with chili powder, cumin, salt, and pepper. Let it marinate for 10 minutes.
  3. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sauté the onions and peppers for about 5 minutes until tender yet crisp.
  4. Add the marinated steak to the skillet and cook until medium-rare (about 4 minutes).
  5. On half of each tortilla, layer the steak mixture and sprinkle with cheese. Fold over to create a quesadilla.
  6. Clean the skillet if necessary; add remaining oil and cook each quesadilla seam-side down for about 3 minutes per side until golden brown.
