  • 1 lb ground beef or turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 bell peppers (red, green, yellow), chopped
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 cup tomato sauce
  • 2 tsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Prepare a 9×13-inch baking dish with nonstick spray.
  2. In a skillet over medium heat, heat olive oil. Sauté onions and garlic until translucent (about 5 minutes).
  3. Add ground meat and cook until browned (approximately 7 minutes). Drain excess fat.
  4. Stir in uncooked rice, diced tomatoes with juice, tomato sauce, Italian seasoning, paprika, salt, and pepper. Simmer for about 5 minutes.
  5. Layer half of the mixture in the baking dish; top with chopped bell peppers; add remaining mixture on top.
  6. Cover with foil and bake for 30 minutes; uncover and bake for an additional 10 minutes until bubbly.
