  • 1 lb ground beef or turkey
  • 1 cup diced onion (about 1 medium onion)
  • 3 cloves garlic (minced)
  • 2 cups diced bell peppers (mixed colors)
  • 1 can (14.5 oz) crushed tomatoes
  • 4 cups vegetable broth
  • 1 cup uncooked white rice
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Chop all vegetables: dice bell peppers and onions.
  2. In a large pot over medium heat, add 1 tbsp olive oil and sauté the diced onions and minced garlic until soft (about 3 minutes).
  3. Add ground beef or turkey to the pot, cooking until browned through (about 5 minutes). Drain excess fat if needed.
  4. Stir in diced bell peppers, uncooked rice, crushed tomatoes, vegetable broth, and Italian seasoning. Mix well.
  5. Bring to a boil; then reduce heat and let simmer uncovered for about 20 minutes or until rice is tender.
  6. Serve hot, garnished with fresh parsley or cheese if desired.
