  • 4 large Portobello mushrooms
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1 cup fresh spinach, chopped
  • 3 cloves garlic, minced
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp grated Parmesan cheese (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Remove stems and gills from Portobello mushrooms; place them upside down on the baking sheet.
  3. In a bowl, mix cream cheese, mozzarella, spinach, garlic, Italian seasoning, salt, and pepper until well combined.
  4. Generously fill each mushroom cap with the mixture.
  5. Bake for 20-25 minutes until golden brown and bubbly.
  6. Sprinkle with Parmesan before serving.
