  • 4 cups stale bread cubes (French or sourdough)
  • 1 cup low-sodium chicken broth
  • 2 large eggs
  • 1 medium onion, finely chopped
  • 1 cup diced celery
  • 2 tbsp fresh sage, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. In a skillet over medium heat, melt 2 tbsp of butter and sauté onion and celery until softened (about 5 minutes).
  3. In a mixing bowl, combine stale bread cubes, sautéed vegetables, fresh herbs, salt, and pepper.
  4. Pour in chicken broth gradually while mixing until just moist; add eggs and mix until combined.
  5. Spoon mixture into the greased muffin tin, packing gently.
  6. Bake for 25-30 minutes until golden brown; let cool slightly before serving.
