  • 8 cups banana peppers, washed and sliced
  • 2 cups white vinegar
  • 2 cups water
  • 1/4 cup kosher salt
  • 1/4 cup sugar

  • 1 tsp peppercorns

Instructions

  1. Sterilize jars in boiling water for 10 minutes.
  2. In a large pot, combine vinegar, water, salt, sugar, garlic, mustard seeds, and peppercorns. Bring to a boil until dissolved.
  3. Pack banana peppers tightly into sterilized jars.
  4. Pour brine over peppers until submerged, leaving half an inch of headspace.
  5. Wipe jar rims clean and seal lids loosely.
  6. Process jars in boiling water bath for 10-15 minutes.
  7. Let cool before storing in a cool place.
