  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup pesto sauce
  • 8 slices bacon, cooked until crispy
  • 2 ripe avocados, sliced
  • 8 large romaine lettuce leaves
  • 1 cup cherry tomatoes, halved
  • 2 tbsp lemon juice

Instructions

  1. Preheat grill or skillet to medium heat. Season chicken with salt, pepper, and minced garlic. Grill for about 6-7 minutes per side until internal temperature reaches 165°F (75°C). Allow to rest before slicing.
  2. Cook bacon in a skillet over medium heat until crispy; drain on paper towels.
  3. Slice grilled chicken into thin strips. Halve avocados and slice them. Halve cherry tomatoes.
  4. On each romaine leaf, layer chicken strips, bacon pieces, avocado slices, and cherry tomatoes. Drizzle with pesto sauce and lemon juice.
  5. Roll each lettuce leaf tightly around the filling and serve immediately.
