  • 8 rice paper wrappers
  • 1 cup fresh mint leaves
  • 1 medium cucumber (thinly sliced)
  • 1 cup julienned carrots
  • ¼ cup peanut butter
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice

Instructions

  1. Poach chicken breasts in seasoned water for 15-20 minutes until fully cooked. Shred once cooled.
  2. Julienne cucumber and carrots.
  3. Soak each rice paper wrapper in warm water for about 10 seconds until soft.
  4. Place shredded chicken, cucumber, carrots, and mint on one end of the wrapper; roll tightly while tucking in the sides.
  5. Mix peanut butter, soy sauce, lime juice, and warm water in a bowl until smooth to create the dipping sauce.
