  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 cup sweet corn (fresh or frozen)
  • 1 cup grated pepper jack cheese
  • 4 cups low-sodium chicken broth
  • 2 tsp cumin
  • 2 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat. Sauté the onion and garlic until fragrant (about 3 minutes).
  2. Add the chicken breasts, season with salt and pepper, and brown lightly on both sides (about 5 minutes).
  3. Pour in the diced tomatoes (with juice), chicken broth, sweet corn, cumin, and chili powder. Stir well and let it simmer for about 20 minutes.
  4. Remove cooked chicken, shred using two forks, then return it to the pot.
  5. Stir in grated pepper jack cheese until melted. Taste and adjust seasoning if necessary.
