  • 2 medium sweet potatoes (about 500g), peeled and diced
  • 1 medium yellow onion, finely chopped
  • 4 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 1 tsp dried thyme
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, heat olive oil. Sauté onions until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  2. Stir in the diced sweet potatoes and pour in enough vegetable broth to cover them. Bring to a simmer and cook until tender (15-20 minutes).
  3. Blend the mixture using an immersion blender until smooth or leave some chunks for texture.
  4. Stir in coconut milk along with thyme, cumin, paprika, salt, and pepper. Simmer gently for an additional 5 minutes.
  5. Ladle into bowls and garnish with fresh herbs or croutons if desired.
