  • 1 lb ground turkey (93% lean)
  • 1/2 cup breadcrumbs (plain or Italian-style)
  • 1 large egg
  • 1 small onion (finely chopped)
  • 1 cup carrots (diced)
  • 1 cup celery (chopped)
  • 3 cloves garlic (minced)
  • 6 cups low-sodium chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground turkey, breadcrumbs, egg, onion, garlic, oregano, thyme, salt, and pepper. Mix until just combined.
  2. Form small meatballs (about 1 inch in diameter) and place on a baking sheet.
  3. In a large pot over medium heat, sauté carrots and celery in olive oil for about 5 minutes until softened.
  4. Add chicken broth and bring to a boil. Gently add meatballs to the pot.
  5. Reduce heat to low and simmer for about 20 minutes until meatballs are cooked through.
  6. Adjust seasoning if necessary and stir in fresh spinach just before serving.
