  • 2 tsp taco seasoning
  • 1 cup bell peppers (chopped, any colors)

  • 2 cups cooked brown rice or shredded lettuce

  • 1 cup shredded cheese (for topping)
  • 1/2 cup salsa (for topping)

Instructions

  1. Gather and chop the bell peppers and red onion. Cook the brown rice according to package instructions.
  2. In a large skillet over medium heat, add 1 tsp olive oil and cook the ground turkey until no longer pink (about 5-7 minutes).
  3. Add taco seasoning and 1/4 cup water to the turkey, stirring well. Simmer for about 3 minutes until thickened.
  4. Push the turkey to one side of the skillet and sauté chopped bell peppers and onions on the other side until tender (about 5 minutes).
  5. Assemble your bowls: start with rice or lettuce, then top with turkey mixture, sautéed veggies, sour cream, shredded cheese, and salsa.
