Twice Baked Sweet Potatoes are a delightful dish that blends creamy sweetness with warm spices, making them the perfect addition to any meal.   • 2 medium sweet potatoes (about 1 lb)
  • 2 tbsp unsalted butter
  • 3 tbsp brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes and poke them with a fork.
  2. Bake the sweet potatoes on a foil-lined baking sheet for 45-60 minutes until tender.
  3. Allow to cool slightly, then slice in half lengthwise and scoop out most of the flesh into a bowl, leaving some around the skin.
  4. Mash the sweet potato flesh with butter, brown sugar, cinnamon, salt, and pepper until smooth. Fold in pecans if using.
  5. Spoon the mixture back into the potato skins and return to the oven for another 15-20 minutes until heated through and golden.
