  • 3 medium bell peppers (mixed colors)
  • 1 lb ground beef (or turkey)
  • 1 cup cooked brown rice
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 1 medium onion (chopped)
  • 2 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup tomato sauce

Instructions

  1. Preheat oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, sauté chopped onions in olive oil until translucent. Add ground meat and cook until browned.
  3. Stir in cooked rice, diced tomatoes, tomato sauce, garlic powder, oregano, salt, and pepper until well combined.
  4. Spoon the mixture into halved bell peppers and place them upright in the baking dish.
  5. Cover with foil and bake for 25 minutes; remove the foil and bake for an additional 5 minutes for a charred top.
  6. Allow to cool slightly before serving; drizzle with extra tomato sauce if desired.
