  • 2 tsp baking powder
  • 1/2 cup almond milk
  • 1/4 cup vegetable oil (or melted coconut oil)
  • 1 tsp vanilla extract
  • 1 cup dairy-free chocolate chips (for coating)
  • Vegan-friendly colored sprinkles

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8-inch square baking pan.
  2. In a bowl, whisk together flour, cocoa powder, sugar, and baking powder until combined.
  3. In another bowl, mix almond milk, vegetable oil, and vanilla extract. Pour into dry ingredients and stir until just combined.
  4. Bake for 25-30 minutes until a toothpick comes out clean. Allow to cool completely.
  5. Crumble the cooled cake into fine crumbs in a large bowl; add almond milk as needed to bind.
  6. Roll into balls and insert lollipop sticks dipped in melted chocolate chips; coat each ball in chocolate and decorate with sprinkles before letting them set on wax paper.
