  • 1 cup chopped walnuts

  • 1 tbsp Dijon mustard

Instructions

  1. Rinse quinoa under cold water, combine with 2 cups of water in a saucepan, bring to a boil, then simmer for 15-20 minutes until liquid is absorbed. Fluff with a fork.
  2. Preheat oven to 400°F (200°C). Wrap beets in aluminum foil and roast for about an hour until tender. Cool and peel.
  3. In a skillet over medium heat, toast walnuts for about 5 minutes until golden brown.
  4. Whisk together orange juice, olive oil, Dijon mustard, salt, and pepper in a bowl to make the vinaigrette.
  5. Combine cooked quinoa, diced beets, toasted walnuts in a large bowl; drizzle with vinaigrette and toss gently.
