  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup brown sugar
  • 1/2 cup unsalted butter (softened)
  • 1 large egg
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, ginger, cinnamon, baking soda, and salt.
  3. In another bowl, cream the softened butter and brown sugar until fluffy. Add the egg and mix well.
  4. Gradually combine the dry ingredients with the wet mixture until a thick dough forms.
  5. Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them two inches apart.
  6. Bake for 10-12 minutes or until lightly golden around the edges.
  7. Let cool before melting white chocolate in a microwave or double boiler. Dip each cookie halfway into the melted chocolate and place back on parchment to set.
