  • 2 lbs beef chuck roast
  • 3 medium carrots, diced
  • 3 medium Yukon Gold potatoes, cubed
  • 2 medium onions, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme (or 2 sprigs fresh)
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Cut beef into bite-sized pieces. Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, then sear until browned on all sides. Remove from pot.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Return the beef to the pot along with carrots, potatoes, tomato paste, beef broth, thyme, and bay leaves. Stir well.
  4. Bring to a boil, then reduce heat to low and cover. Simmer for about two hours or until beef is tender.
  5. Taste and adjust seasoning as needed before serving hot with crusty bread or over rice.
