  • 2 ripe avocados (about 1 ½ cups when mashed)
  • 4 hard-boiled eggs
  • 2 tbsp fresh lemon juice
  • ¼ cup finely chopped red onion
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper (or to taste)

Instructions

  1. Boil the eggs for 9-12 minutes until hard-boiled. Transfer them to an ice bath to cool.
  2. In a mixing bowl, mash the ripe avocados with a fork until smooth yet chunky.
  3. Peel and chop the cooled eggs and add them to the bowl along with red onion and lemon juice.
  4. Gently mix until combined. Season with salt and pepper to taste.
  5. Serve chilled or at room temperature, optionally in lettuce cups or with crackers.
