  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup red lentils
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 cup fresh cilantro or parsley, chopped
  • 1 large egg (or flaxseed mixture for vegan option)
  • 1/2 cup panko breadcrumbs
  • 2 tbsp olive oil (for frying)

Instructions

  1. Cook the lentils: Rinse red lentils under cold water until clear. In a saucepan, combine with 2 cups of water and bring to a boil. Reduce heat and simmer for about 15 minutes until tender. Drain excess water.
  2. Roast the sweet potatoes: Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil on a baking sheet and roast for 25 minutes until fork-tender.
  3. Combine ingredients: In a mixing bowl, mash roasted sweet potatoes with cooked lentils. Add onion, garlic, spices, herbs, and beaten egg (or flaxseed mixture). Mix well.
  4. Shape patties: Form mixture into patties about half an inch thick. Roll each in panko breadcrumbs for extra crunch.
  5. Cook patties: Heat olive oil in a skillet over medium heat. Cook patties for about 4 minutes on each side until golden brown.
  6. Serve: Transfer cooked patties to paper towels to absorb excess oil before serving with yogurt sauce or your favorite dip.
