  • ¾ cup granulated sugar
  • ½ cup brown sugar (light or dark)

  • 1 tsp vanilla extract
  • ½ cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 2 tbsp milk or cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a bowl, whisk together flour, granulated sugar, brown sugar, cinnamon, baking powder, baking soda, and a pinch of salt.
  3. In another bowl, mix pumpkin puree, eggs, vanilla extract, and melted butter until smooth. Combine with dry ingredients.
  4. Stir until just blended; do not overmix. Fill cupcake liners about two-thirds full.
  5. Bake for 18-20 minutes or until a toothpick comes out clean. Cool on a wire rack.
  6. For frosting: Beat softened butter until creamy. Gradually add powdered sugar and milk/cream until smooth and fluffy.
  7. Frost cooled cupcakes generously and enjoy!
