Ingredients

Scale
  • 4 cups diced carrots (about 4 medium-sized)
  • 2 cups diced potatoes (about 2 medium-sized Russet or Yukon Gold)
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 1 tsp ground cumin
  • 1/2 tsp ground nutmeg
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté the chopped onion for about 5 minutes until translucent; add garlic and cook for an additional minute.
  2. Stir in diced carrots and potatoes, cooking for about 2 minutes to combine.
  3. Pour in vegetable broth, bringing it to a gentle boil. Reduce heat and simmer for approximately 20 minutes or until vegetables are tender.
  4. Remove from heat; blend until smooth using an immersion blender or regular blender (leave some chunks if desired).
  5. Return to low heat, stir in coconut milk, cumin, and nutmeg; warm through for another 5 minutes.
  6. Serve garnished with fresh herbs or roasted seeds.
